Matched Comparison of Unprocessed and Ultraprocessed Diets

Brief description of study

You are invited to participate in a research study at the University of Pennsylvania. Researchers will examine the effects of two different diets on the bacteria that live in your body: the convenience diet which includes highly processed foods, and the whole foods diet which includes little or no processed foods.

Detailed description of study

This study will require you to stay at the Hospital of the University of Penn (HUP) for 11 days, eat study meals for the 14 days (including the 11 days that you are at HUP), provide stool, blood and urine samples, have 4 rectal swabs completed, 4 mixed meal tolerance tests completed, 3 neurocognitive tests, and complete one dental visit at the Penn Dental School. While you are staying at HUP all food and beverages will be provided and you will have access to WIFI and cable TV in your own private room.  Study participants will be paid a total of $2300 for completion of the study.
